I’m sorry but I have been keeping a secret from you. My absolute favourite dessert is the famous lava cake or sometimes, known as Roy’s Chocolate Souffle (Molten Lava Cake) and the best place to have it, is in Rancho Mirage, at Roy’s Restaurant. If you don’t live in the Palm Springs area, no problem because there are 31 Roy’s in the world and 23 of them are in continental US and 6 in Hawaii. I’ve been to other Roy’s locations including the one in Newport Beach, Woodland Hills, Phoenix, Waikoloa on the Big Island and the one near Kapalua in Maui. The best one is right here in Rancho Mirage where we celebrated our condo purchase last December.
Before settling down at your table, ask the server over and pre-order the chocolate souffle. The molten lava cake is made fresh daily at Roy’s and they hardly run out of the ingredients. In other words, I have never been disappointed with them running out of them or heard of anyone that did not like it. The server will tell you that this is the most popular dessert at Roy’s and the most scrumptious. Just make sure you leave room in your stomach for it because it is the best lava cake around and a great finish to a great meal.
When served to you, it comes with a scoop of ice cream and some raspberry swirl. As soon as you sink your spoon into the centre of it, the hot chocolate fudge oozes out. The crust is lightly crisp and oh so, rich! It is a dessert worth dying for.
If you’re in the neighbourhood on June 30th, you should sign up for a cooking class at Roy’s in Rancho Mirage. For $60 per person, you learn to cook three courses including a cassava cake. If I was in, I would do it in a flash. Or better yet, make reservations for the chocolate souffle alone. (Thanks to the Girl who ate everything, here’s a recipe that Roy had shared it with.)
